About The Speaker


Jay N. San Pedro is a full-time Food & Beverage Manager for an up-and-coming Korean-owned restaurant and food service company that is set to take the country by storm. Currently, he is very much involved, together with the other core team members, in preparing for the opening of the restaurant which includes the creation, sourcing, testing, and procurement of products.
Jay started his hospitality career back in 1993 as a waiter at Cheval Blanc of Makati Shangri-La Hotel. He spent 15 years with the Shangri-La Hotel Group moving from various outlets/positions and properties (from Hongkong to Oman - Pre-opening Team). During his prime, he was awarded the Employee of the Year for his dedication and hard work.
He moved back to the Philippines and joined another property in Alabang as a Training Manager/Restaurant Manager. He then joined a boutique hotel in Manila as a pre-opening team member cum Banquet Manager.
Jay also served as a pre-opening team member in the capacity of F&B Training Manager at one of the Integrated Resort, Hotel, and Casino properties located at the Entertainment City for 7 years. He holds a degree in Hotel and Restaurant Management from the Polytechnic University of the Philippines.
He firmly believes that perseverance and devotion to the craft are not enough to stay on top of the game as a hotelier who has several years of valuable experience under his belt. One must keep up with the changing times by constantly researching the complex and challenging hotel and restaurant management principles and customer service. It is important to be updated with the times now that everything is going back to normal after the pandemic brought about by the COVID-19 virus has dealt its hard blow on the industry he has served through the years.
